This is a copy of our certificate for winning a gold star at the Great taste Awards for our Original Goat. Original Goat is the first cheese we ever made. It is a young fresh and creamy, crumbly cheese, based on a wensleydale recipe.
We moved from Horton in Ribblesdale to Hawes in October 2007, just 18 months after Iona took over the business after the death of her uncle who founded the business in 1978. The reason we moved was to become cheese makers once again after a gap of over 15 years. We sadly did not have enough space to install a small dairy in our old premises which were just 1,200 sq ft. Our Hawes premises are 2,200 sq ft and we have outgrown that already!
We first bought our goat milk from a lovely gentleman called John Parker who always had a twinkle in his eye and was based at West Burton, just down the road from us. He is sadly no longer with us. After John, we bought our milk from Lancashire and for the last 18 months, from Jonathan Robertshaw who is based in Grewelthorpe in the heart of the Yorkshire Dales. Jonathan’s goat milk is superb quality and we are proud to have him as a goat milk supplier. I can’t help feel that a lot of the credit for our award winning goat cheeses should go to Jonathan and his goat’s milk.
It took us just six weeks to get our little dairy up and running and about six weeks after that, we secured a listing with Booths for our Original Goat where you can still buy it today.
Whilst our little dairy has become a little cramped, with another, smaller vat and a large second hand press, we now make seven goat cheeses, Original Goat being the one we make the most of. It is our second biggest seller and with increasing sales, I am hoping that it will become our best seller.
This is the judge’s tasting notes for our Original Goat:
Nice even texture and the aroma is clean, fresh and lemony.
Hint of goat flavour, a fresh flavour with hints of citrus.
Slightly dry texture.
A nicely made cheese.
